What is vitamin B12?
Hardly any other vitamin is better known for its possible deficiencies than vitamin B12. The reason for this is very simple: many people are affected. Vegans and vegetarians in particular are often said to be deficient in vitamin B12, but people who eat a varied and balanced diet can also be affected. Your body cannot produce vitamin B12 itself, so you have to get it from outside - for example through food.

But let's start at the very beginning. Vitamin B12 is not actually a single vitamin, but a whole group of vitamins known as cobalamins. Vitamin B12 is produced by microorganisms. Plants cannot produce vitamin B12 themselves. If they do contain small amounts of the vitamin, it is because the microorganisms required for it have settled on their surface.

The situation is different with meat. In ruminants in particular, but also in other mammals, the microorganisms that produce vitamin B12 are found in the stomach. From there, the vitamin B12 is distributed throughout the animal's body, into the tissue and even passes into the milk. If we eat the meat of these animals - or consume their milk - we also absorb vitamin B12. Fish, on the other hand, absorb vitamin B12 by eating single-celled marine plants or plankton that contain vitamin B12-producing bacteria. This means that fish can also be rich in vitamin B12.

The big but: Even if some foods have a high vitamin B12 content, unfortunately a large part of the vitamin is lost when frying or cooking. Vitamin B12 is one of the heat-sensitive vitamins. It is assumed that around 25 to 35% of the vitamin is lost when preparing products containing vitamin B12. This explains why a vitamin B12 deficiency can occur even with a varied diet.
